Everybody in the Philippines is familiar with the Tak-tak-tak commercial of a popular MSG brand. It is very popular not only because of its flavor enhancing properties, but because it is very affordable. MSG, monosodium glutamate, is a food additive used to enhance flavor. It gives the “umami” taste to foods. However, many people have a connotation that is harmful, and sometimes fatal to health. But what really is the truth about it?

MSG is very popular in Asian cooking. It is also used in many processed foods in the U.S. and in Europe. So how is it harmful to our health?

People say: MSG acts as an excitotoxin which damages the nerve cells

Science says: There are no human studies to support this.

People say: Consuming food with MSG can lead to adverse effects like headache, muscle tightness, numbness/tingling, weakness and flushing.

Science says: This group of symptoms is called the Chinese Restaurant Syndrome, however, studies have been conducted that has not shown any connection with MSG and these symptoms.

People say: It causes asthma attack.

Science says: A study showed that taking large doses of MSG caused asthma attack to certain individuals.

People say: MSG results to weight gain.

Science says: A study says that it can result to weight gain, another study says it can regulate the appetite which can help reduce food intake.

Anything in excess is definitely harmful! Megadoses of this flavor enhancer may really cause harm. So, should we ditch it? Science says using it in moderation can be good, but we also have to know how we react to it. Some people are sensitive to MSG, which should actually try to lessen or avoid foods with it. It is in knowing how much you can take and how it could affect you that can help you determine if you have to avoid MSG.
